BBQ Chicken Alfredo

I’m in serious need of comfort food. At the rate I’m going the scale is going to have some choice words for me, but I just need a little more time on my hiatus. Plus this heavy whipping cream in my fridge is screaming my name. So homemade Alfredo it is!

I wanted to add a bit of a twist on the traditional Chicken Alfredo dish so I decided to make BBQ chicken instead of regular old chicken breast. My first mind was to blacken the chicken but that’s a pretty tough task without a cast-iron skillet. This recipe is actually very quick and easy, and of course delicious. It’s both kid and man approved.

  • 3 boneless, skinless chicken breasts
  • 1 tsp seasoning salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 2 tbsp olive oil
  • 1/4 cup BBQ sauce

  • Preheat oven to 350
  • Heat frying pan on medium-high
  • Season the chicken
  • Sear in frying pan for 3-5 minutes on each side
  • Place chicken on baking sheet (I always use foil for easy clean up)
  • Pour on olive oil and make sure both sides of the chicken breasts are covered
  • Pour barbeque sauce on both sides of the chicken
  • Bake for about 10-12 minutes or until the chicken is cooked through

**Be careful not to overcook the chicken because dry chicken breasts sucks!

BBQ Chicken

  • 1/2 cup salted sweet cream butter
  • 1 cup heavy whipping cream
  • 1 cup shredded provolone, mozzarella, parmesan & romano cheese (pizza mix)
  • 1/2 tsp garlic powder
  • Sprinkle of seasoning salt

  • Melt butter in a medium sauce pan on medium heat
  • Add heavy cream and mix well
  • Pour in the cheese 1/2 cup at a time and stir until melted
  • Sprinkle in the garlic powder and seasoning salt and stir

I really hope you enjoy this recipe. The creaminess of the alfredo and the sweetness of the BBQ sauce really paired very well for me. Happy eating!
