These days I am addicted to chopped salad, and I can’t get enough of it. It’s so bad that I’ve been eating it for breakfast. Last week I had kale chopped salad. This week I wanted to try using cabbage and Brussels. I intended to have iceberg lettuce be the base of the salad, but as I started cutting into the head of lettuce I realized I hadn’t done a good job picking the iceberg. The entire inside of the lettuce was brown!!
Still, there was no way in Havana I was going back to the store, so I decided to toss the iceberg and go for a cabbage salad. I was very pleased with the results. The salad was beautiful and tasted just as good.
Ingredients:
- 1 head purple cabbage
- 1 bag fresh Brussels sprouts
- 1 cup raw almonds
- 1 bag plain wonton chips
Directions:
- Chop your cabbage and Brussels as well as you can
- Mix together with almonds and wonton chips
- Add a dressing of your choice–I like ginger dressing and I also like creamy cilantro dressing
- Crunch and enjoy!
Can you steam the vegetables? I ask this because sometimes I find it hard to chew. Looks very tasty!
