It’s that time of year again…our church is starting our 40 day fast. I enjoy the fast because it gives me an opportunity to reset spiritually and physically. As always, I’ll be building all my recipes over the next 40 days around the Daniel Fast. That’s right folks…vegan and gluten free for 40 days. I hope you’ll join me!
What you need:
- 3 medium cucumbers
- 4 Roma tomatoes
- 2 large green tomatoes
- 1 onion (if you choose)
- A couple of sprigs of dill
- 1 cup white vinegar
- The juice from 1 lemon
- Salt, pepper and crushed red pepper to taste
- Chop all of your veggies up. You can peel your cucumbers if you like but I love the skin so I don’t. I also don’t use onions. I hate them and they aren’t allowed in my house. And don’t worry about my husband. I chose him because he hates onions just as much as I do 😜
- Dump your chopped veggies into a large bowl
- Mix in your salt and peppers
- Pour your vinegar in
- Squeeze in your lemon juice
- Pull off some doll from your sprigs
- Mix well and let chill for at least an hour
- Enjoy!
I like to let mine set over night so all the flavors come together. This is such a delisicous salad and it reminds me of summer which is so necessary as we transition to fall. Happy healthy eating!
